As summer is approaching and assignments are due in, us students really don’t want to spend hours slaving in the kitchen. So, here’s my meatball kebab recipe which will satisfy your hunger before those long nights in Pierson…
You will need:
Beef Meatballs (£2.20 for 400g @ Asda)
Peppers (99p for 3 @ Asda)
Courgettes (£1.49 for 3 @ Asda)
Aubergine (50p for 1 @ Asda)
Red Onion (£1.00 for 4 @ Asda)
Side Salad (Bag for £1.00 @ Asda)
Total = £7.18
You can add whatever vegetables you’d like to the kebab skewers. If you don’t have kebab skewers you can buy 100 wooden skewers for £1.00 or 6 metal ones for the same price from Asda.
Pre-heat the oven at 180 degrees.
Pre-cook the meatballs in the oven for around 10 minutes.
While the meatballs are cooking, cut the vegetables up large enough so that they can be skewered and either fry in a saucepan or grill for around 5-8 minutes just so the vegetables soften slightly.
Once the vegetables and meatballs are done, add the vegetables and meatballs to the skewers and pop onto a baking tray and further cook for another 10-15 minutes depending on how well done you like your vegetables.
While they’re cooking prepare your bagged salad or any other side you would like with your kebabs. Wedges, corn on the cob, tomatoes, spring onions, radishes… anything you fancy!
Once the skewers are cooked to your liking, plate up and enjoy!!
A nice salsa also goes down well with the kebabs and salad! This is one of my favourite summer dishes which is very satisfying!
